I have been been experimenting with crepe and pancake recipes for awhile now, but came acrossGluten Free Vegan Girl’s pancake recipe, pictured below:
And the verdict? They were wonderful and easy to make! She also has many other delicious recipes on her blog, be sure to check them out!
I halved the recipe and had enough for a big breakfast for myself. The pancakes coloured well.
Almond milk is usually available in Thai supermarkets. As well, I didn’t have any dates, but the pancakes still tasted very good. I made a passion fruit and pineapple sauce, with a bit of honey added in.
Gluten Free Vegan Girl has earned a place in my bookmarks 🙂
